Date night Lamb Lollipops are fancy and tasty! Let’s start cooking!
Firstly, prepare your seasoning!
Ingredients:
- Thyme
- Onion
- Garlic
- Sweet Pepper
- Scotch Bonnet Pepper
- Escallion
- plus all of your other favourite herbs
Pour about a cup & a half of water into a pot and allow it to reach boiling point then add all of your natural seasonings to the pot and allow it to steam with the pot covered.
Now, let’s prepare the lamb!
- Get about 8 lamb racks for a serving of two
- Wash the lamb racks with water and some vinegar (white vinegar is fine)
- Season with some of the natural seasonings you prepared earlier
- add some black pepper
- Add All purpose seasoning. I tend to go for Maggi’s All Purpose but please, use your favourite!
6. A little salt. Note, the Maggi All Purpose contains a lot of sodium so try not to use too much if you are thinking of using that one.
7. Add some Olive oil or Coconut oil to you pot with the steaming natural seasoning.
8. Then add some fish and meat sauce. It is important to not use the sauce you like but rather choose one that actually taste good. I like Grace’s Fish and Meat Sauce:
9. Add the lamb racks and turn the flame or heat down and allow to slow cook for about 40 minutes. Add some more meat sauce and any other sauce like
Cook for another 15 minutes or when lamb racks are tender. Trust the process!
Feel free to prepare your favourite sides to go with these lamb racks and serve with some white wine. Not just any white wine.
