Comfort Chicken Soup

Let’s get this pot of deliciousness started – Home made comfort soup!

Ingredients

  • 2 lbs pumpkin/ squash
  • 4 Irish Potatoes
  • 1 Chicken breast
  • Escallion or celery
  • Thyme
  • 2 Scotch Bonnet peppers
  • 2 Carrots
  • 4 corns (Optional)
  • 1 Grace Cock Soup Mix Spicy (Use your preferred brand)
  • 2 Grace Cock Soup Mix Pumpkin (Again, use your preferred brand)
  • 4-6 Cups of Water (Use your own judgement here!)
  • A dash of salt
  • 2 teaspoon of vegetable cooking oil or half stick of butter

Direction

Add water to soup pot and bring to a boil over medium heat. Add a dash of salt to the water, the scotch bonnet peppers, escallion, oil and thyme and cover the pot. Next, dice the pumpkin  (or squash), Irish potatoes, chicken breast and carrots and add to the soup pot. Finally, add corns to the pot.

Allow the soup to cook for about 15 minutes then add both Grace Cock Soup mixes to the soup mix.

Turn the heat down to low and allow to cook for about 45 minutes. Monitor the soup regularly and stir occasionally. Also, add more water if necessary.

The soup will be ready for serving in about an hour. Please note, this is an excellent remedy for the  flu and colds or just added comfort for those cold nights!
